Prepare the Pancetta
In a large skillet over medium heat, add the pancetta slices and cook until crisp, about 5-7 minutes. Turn occasionally to ensure even cooking. Once crispy, remove from the skillet and place on paper towels to drain excess fat.

Prepare the Figs
While the pancetta is cooking, wash the fresh figs under cold water. Pat them dry with a paper towel. Cut each fig in half lengthwise and set aside.

Crumble the Cheese
Using a fork, crumble the gorgonzola cheese into small pieces so it can be easily placed on the figs.
Assembly

Assemble the Figaro
On a serving platter, place the halved figs cut side up. Top each fig half with a small amount of crumbled gorgonzola cheese.

Add Pancetta and Honey
Break the crispy pancetta into smaller pieces and place one piece on each fig topped with gorgonzola. Drizzle truffle honey over the assembled figs to enhance the flavors.
