Cauliflower Preparation

Roast the Cauliflower
Preheat your oven to 400°F (200°C). In a large bowl, toss the cauliflower florets with olive oil, curry powder, salt, and black pepper until evenly coated.

Bake the Cauliflower
Spread the cauliflower mixture on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
Wrap Assembly

Prepare the Wraps
Take a whole wheat wrap and spread about 1/4 cup of spicy hummus evenly on the surface.

Add the Filling
Once the cauliflower is roasted, let it cool slightly. Place 1 cup of the curried cauliflower in the center of the wrap.

Layer Remaining Ingredients
Top the cauliflower with chopped toasted almonds, sliced roasted red peppers, golden raisins, and a handful of arugula.

Wrap it Up
Fold in the sides of the wrap and roll it tightly from the bottom up. Repeat with the remaining wraps and ingredients.
