Method
Pasta Preparation
- 1
Cook the Capellini
Bring a large pot of salted water to a boil. Add the capellini and cook according to package instructions until al dente, usually about 2-3 minutes. Drain and set aside, reserving 1/2 cup of the pasta cooking water.
Sauce Preparation
- 2
Sauté the Garlic
In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- 3
Add Tomatoes
Add the canned whole tomatoes (including their juices) to the skillet. Use a wooden spoon to break the tomatoes up into smaller pieces. Simmer for about 10 minutes, stirring occasionally.
- 4
Season the Sauce
Stir in the chopped fresh basil, salt, and black pepper. Allow the sauce to simmer for an additional 5 minutes to let the flavors meld.
Combine and Serve
- 5
Combine Pasta and Sauce
Add the drained capellini to the skillet with the tomato sauce. Toss gently to combine, adding reserved pasta water as needed to reach desired sauce consistency.
- 6
Serve
Serve the capellini al pomodoro hot, garnished with additional fresh basil if desired and a sprinkle of grated Parmesan cheese.
