Calamari and Peppadews

Method

Calamari and Peppadews Preparation

  1. 1

    Prepare the Calamari

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to create a seasoned flour mixture.

  2. 2

    Coat the Calamari

Dredge the sliced calamari in the seasoned flour mixture, ensuring each piece is well coated. Shake off any excess flour and set aside.

  3. 3

    Prepare the Peppadews

Slice the peppadew peppers and set aside for frying along with the calamari.

Frying

  1. 4

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Calamari and Peppadews

Carefully add the coated calamari to the hot oil in batches. Fry for about 2-3 minutes until golden brown and crispy. Add the sliced peppadews during the last minute of frying.

  3. 6

    Drain and Serve

Using a slotted spoon, transfer the fried calamari and peppadews to a plate lined with paper towels to drain excess oil. Season with additional salt if desired.

Spicy Aioli Preparation

  1. 7

    Mix the Ingredients

In a small bowl, combine the mayonnaise, minced garlic, fresh lemon juice, sriracha sauce, and salt. Stir until smooth and well combined.

  2. 8

    Taste and Adjust

Taste the aioli and adjust the seasoning with more salt or sriracha if desired.
