Method

Preparation

  1. 1

    Prepare the Tomato Mixture

Start by washing the fresh tomatoes under running water. Dice them into small cubes and place them into a mixing bowl.

  2. 2

    Chop the Basil

Rinse the fresh basil leaves, pat them dry, and tear or chop them into small pieces. Add to the bowl with the tomatoes.

  3. 3

    Add Garlic

Peel and finely mince the garlic cloves. Add the minced garlic to the tomato and basil mixture.

  4. 4

    Season the Mixture

Drizzle the extra virgin olive oil over the tomato mixture. Season with salt and black pepper to taste. Mix everything gently and set aside to let the flavors meld.

Grilling the Bread

  1. 5

    Prepare the Bread

Slice the baguette or Italian bread into 1-inch thick slices.

  2. 6

    Grill the Bread

Preheat a grill or grill pan over medium heat. Grill each slice of bread for about 2-3 minutes on each side until it is golden brown and has grill marks.

Assembly

  1. 7

    Top the Bread

Once the bread is grilled, remove it from the grill and arrange the slices on a serving platter. Spoon the tomato mixture generously over each slice.

  2. 8

    Serve

Drizzle a little more olive oil over the bruschetta if desired. Serve immediately while the bread is warm.
