Preparation

    Prepare the Garlic

    Preheat your oven to 400°F (200°C). Take the head of garlic and cut off the top 1/4 inch to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.

    Prepare the Broccolini

    While the garlic is roasting, trim the ends of the broccolini and rinse under cold water. Pat dry with a paper towel.

    Oven-Dried Tomatoes

    If the oven-dried tomatoes are not ready, slice fresh tomatoes and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake in the oven at 200°F (93°C) for 2-3 hours until they are dried but still slightly pliable.

    Sauté the Broccolini

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccolini and season with salt and pepper. Sauté for about 5-7 minutes until it's tender but still bright green.

    Add Roasted Garlic and Tomatoes

    Once the broccolini is cooked, squeeze the roasted garlic cloves out of their skins directly into the skillet. Add the oven-dried tomatoes and mix well to combine all flavors.

    Melt the Fontina Cheese

    Reduce the heat to low and sprinkle the fontina cheese evenly over the broccolini mixture. Cover the skillet with a lid and let it cook for 3-5 minutes until the cheese is melted and bubbly.

    Serve

    Remove the skillet from heat and serve warm as a side dish or light main course.
