For the Braised Short Ribs

Prepare the Short Ribs
Preheat the oven to 300°F (150°C). Season the beef short ribs with salt and black pepper on all sides.

Add Broth and Herbs
Add beef broth, thyme, and bay leaves to the pot. Stir to combine.

Braise the Ribs
Return the short ribs to the pot, cover, and transfer to the oven. Braise for 3 to 4 hours, or until the meat is tender and falling off the bone.

Rest the Ribs
Remove the pot from the oven and let the ribs rest in the sauce for at least 20 minutes before serving.
For the Gorgonzola Cream Gnocchi

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

Prepare the Cream Sauce
In a saucepan over medium heat, melt butter. Add heavy cream and bring to a gentle simmer.

Add Cheeses
Stir in the gorgonzola cheese and parmesan cheese, mixing until melted and smooth. Season with salt and black pepper to taste.

Combine Gnocchi and Sauce
Add the cooked gnocchi to the cream sauce and toss gently to coat. Cook for an additional 2-3 minutes to heat through.

Plate the gnocchi and top with braised short ribs. Garnish with chopped chives before serving.
