Prepare Chicken
Preheat your oven to 375°F (190°C). Place the boneless, skinless chicken breasts on a cutting board and pound them to an even thickness using a meat mallet.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs mixed with grated Pecorino Romano cheese. Dredge each piece of chicken in flour, dip in the egg, and finally coat with the breadcrumb mixture.

Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken pieces and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
Baking and Serving

Assemble the Chicken Parmesan
In a baking dish, arrange the fried chicken breasts. Top each piece with a generous amount of shredded mozzarella cheese.

Bake
Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Cook Pasta
While the chicken is baking, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Serve
To serve, place a portion of pasta on each plate, ladle house-made marinara sauce over the pasta, and top with a piece of the chicken parmesan. Garnish with fresh basil leaves.
