Make the Dough
In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add a little more flour as needed.

Shape the Gnocchi
Divide the dough into quarters. Roll each quarter into a long rope, about 1/2 inch thick. Cut the rope into 1-inch pieces. Optionally, use a fork to make ridges on each piece.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi in batches. Cook until they float to the top, about 2-4 minutes. Remove with a slotted spoon and set aside.

Sauté Garlic
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

Add Tomatoes
Add the halved cherry tomatoes to the skillet. Season with salt and pepper. Cook until the tomatoes begin to soften, about 5-7 minutes.

Combine with Gnocchi
Add the cooked gnocchi to the skillet and gently toss to combine. Cook for an additional 2 minutes to heat through.

Finish with Basil and Cheese
Remove from heat and stir in chopped basil and grated Parmesan cheese. Serve immediately.
