Prepare the Chicken
Clean the chicken breasts under cold running water, pat them dry with paper towels, and cut them into bite-sized pieces.

Chop the Vegetables
Wash and chop the bell pepper, zucchini, carrots, and green beans into uniform pieces for even cooking.

Mince the Garlic and Chop the Onion
Peel and mince the garlic cloves. Peel and chop the onion into small pieces.

Sauté the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from skillet and set aside.

Cook the Vegetables
In the same skillet, add a bit more olive oil if needed. Add the minced garlic and chopped onion, sautéing for 2-3 minutes until fragrant and translucent. Then add the chopped bell pepper, zucchini, carrots, and green beans. Cook for an additional 5-7 minutes until the vegetables are tender but still crisp.

Make the Sauce
In a small bowl, mix the chicken broth, soy sauce, cornstarch, dried oregano, and dried thyme until well combined. Pour this mixture over the vegetables in the skillet.

Combine and Finish
Return the cooked chicken to the skillet, stirring everything together. Allow the sauce to thicken for about 3-5 minutes, stirring occasionally. Adjust seasoning with salt and black pepper as needed.
