Cooking Pasta

Boil Water
Fill a large pot with water, add a generous amount of salt, and bring it to a boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to the package instructions until al dente. This usually takes about 8-10 minutes.

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta cooking water.

Drain the spaghetti and set aside.
Preparing Sauce

Mix Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Set the egg mixture aside while you prepare the pancetta.
Cooking Pancetta

Cook Pancetta
In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes.

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with pancetta, tossing to combine.

Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to prevent the eggs from scrambling.

If the sauce is too thick, gradually add reserved pasta water a little at a time until you achieve a creamy consistency.

Plate the spaghetti carbonara and garnish with chopped fresh parsley. Serve immediately.
