Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add 8 cups of pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing the Vegetables

    Sauté the Vegetables

    In a large skillet over medium heat, add 4 tablespoons of olive oil. Once hot, add 2 cups of mixed bell peppers, 1 cup of zucchini, 1 cup of cherry tomatoes, 1 cup of grated carrot, and 1 cup of broccoli florets. Sauté for about 5-7 minutes until vegetables are tender but still crisp.

Making the Sauce

    Add Garlic and Seasonings

    To the sautéed vegetables, add 4 teaspoons of minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir to combine and cook for another 2 minutes until garlic is fragrant.

    Combine Pasta and Sauce

    Add the drained pasta to the skillet with the sautéed vegetables and toss everything together. Sprinkle with 1 cup of grated Parmesan cheese and toss again until well combined.

Serving

    Garnish and Serve

    Remove from heat, and garnish with 1 cup of fresh basil leaves. Serve immediately while hot.
