Method

Preparation

  1. 1

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

  2. 2

    Add Garlic and Other Vegetables

Stir in the minced garlic and cook for an additional minute. Then, add the diced zucchini, green beans, and spinach. Cook for another 3-4 minutes until the spinach wilts.

Cooking the Soup

  1. 3

    Combine Broth and Tomatoes

Pour in the vegetable broth and add the canned diced tomatoes, along with their juices. Stir to combine.

  2. 4

    Season the Soup

Add the bay leaves, Italian seasoning, salt, and black pepper. Bring the soup to a boil, then reduce the heat to a simmer.

  3. 5

    Cook the Pasta

Add the small pasta to the pot and let it cook for about 10 minutes, or until al dente.

Finishing Touches

  1. 6

    Add Final Ingredients

Remove the bay leaves from the soup. Stir in the grated Parmesan cheese and chopped fresh basil, mixing well.

  2. 7

    Serve

Ladle the minestrone into bowls and serve hot. Optionally, top with additional Parmesan cheese and fresh basil.
