Crust Preparation

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand.

    Press Into Pan

    Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to help pack it evenly. Bake in the preheated oven for 8-10 minutes until slightly golden. Remove from the oven and let cool.

Cheesecake Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, sour cream, and vanilla extract, mixing until fully combined.

    Add Eggs and Cornstarch

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Finally, add the cornstarch and mix until smooth.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 55-60 minutes until the edges are set and the center slightly jiggles. Turn off the oven and leave the cheesecake inside for another hour.

    Remove the cheesecake from the oven and let it cool at room temperature for 1 hour. Then, cover and refrigerate for at least 4 hours, preferably overnight.

    Once the cheesecake is completely chilled, sprinkle an even layer of granulated sugar over the top of the cheesecake.

    Brulee the Sugar

    Using a kitchen torch, carefully caramelize the sugar until it melts and forms a golden crust. If you don't have a kitchen torch, broil it in the oven for a few minutes while watching closely to avoid burning.

    Let the bruleed cheesecake sit for a few minutes to allow the sugar crust to harden before slicing and serving.
