Method

Cake Layers

  1. 1

    Prepare the Oven and Pans

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, beat the softened butter until creamy. Gradually add the sugar and continue to beat until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Wet and Dry Ingredients

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  6. 6

    Bake the Cakes

Divide the batter evenly between the two prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cakes

Once baked, remove from the oven and allow cakes to cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.

Coffee Mixture

  1. 8

    Prepare Coffee Mixture

In a medium bowl, combine the cooled brewed coffee, coffee liqueur (if using), and sugar. Stir until the sugar is dissolved.

Filling

  1. 9

    Prepare Filling

In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until the mixture is smooth and forms stiff peaks.

Assembly

  1. 10

    Layer the Cake

Once the cakes are completely cool, slice each cake in half horizontally to create four layers. Place the first layer on a serving plate.

  2. 11

    Soak the Layers

Using a pastry brush, soak the top of the first layer with the coffee mixture.

  3. 12

    Add Filling

Spread a layer of the mascarpone filling on top of the soaked cake layer.

  4. 13

    Repeat Layers

Repeat the soaking and filling process with the second and third layers, then place the final layer on top.

  5. 14

    Chill the Cake

Cover the assembled cake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

  6. 15

    Serve

Before serving, dust the top of the cake with cocoa powder. Slice and enjoy your delicious Tiramisu Cake!
