Steak Preparation

    Cook the Steak

    Season the ribeye steak with salt and pepper. Heat a skillet over medium-high heat and add a bit of oil. Once hot, place the steak in the skillet and sear for about 4-5 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes before slicing thinly.

    Caramelize Onions

    Slice the yellow onion thinly. In the same skillet used for the steak, add a bit more oil if necessary and reduce the heat to medium. Add the sliced onion and cook, stirring occasionally, for about 15-20 minutes until golden brown and caramelized.

    Prepare Peppers

    While the onions are caramelizing, slice the long hot peppers lengthwise and remove the seeds if desired. Sauté them in a separate pan with a little olive oil until tender, about 5-7 minutes.

    Slice Tomatoes

    Slice the medium tomato into thin rounds and set aside.

Pesto Aioli Preparation

    Make the Aioli

    In a small bowl, combine the mayonnaise, pesto sauce, minced garlic, and lemon juice. Mix well until smooth and set aside.

Assemble and Grill

    Assemble the Panini

    Take one slice of panini bread or ciabatta and spread a generous amount of pesto aioli on one side. Layer the sliced steak, caramelized onions, sautéed long hot peppers, tomato slices, and mozzarella cheese on top. Place the other slice of bread on top, aioli side down.

    Grill the Panini

    Heat a panini press or a skillet over medium heat. Place the assembled sandwich in the press or skillet, and cook for about 4-5 minutes, or until the bread is golden brown and the cheese is melted. If using a skillet, press down with a spatula to flatten the sandwich.

    Slice and Serve

    Once the panini is grilled to perfection, remove it from the heat, let it sit for a minute, then slice in half and serve hot.
