    Wash the fresh spinach thoroughly under cold water to remove any dirt or grit. Drain and set aside. Peel and mince the garlic cloves. Thinly slice the red onion.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat until it shimmers.

    Sauté the Onion and Garlic

    Add the thinly sliced red onion to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent. Then, add the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to burn the garlic.

    Gradually add the fresh spinach to the skillet, stirring continuously. The spinach will wilt down significantly in volume. Cook for about 3-5 minutes until the spinach is fully wilted.
