Preparation of Ingredients

    Prepare the Potatoes

    Peel and cut the potatoes into cubes. Place them in a pot of salted water and bring to a boil.

    Prepare the Tomatoes

    Chop the plum tomatoes and halve the cherry tomatoes. Set aside.

    Prepare the Spinach

    Wash and rinse the fresh spinach leaves. Drain and set aside.

Cooking the Dish

    Cook the Potatoes

    Boil the potatoes for about 15-20 minutes or until they are fork-tender. Drain and set aside.

    Sauté the Spinach

    In a large skillet, add a tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Remove from the skillet and set aside.

    Cook the Salmon

    In the same skillet, add another tablespoon of olive oil. Season the salmon fillets with salt and pepper. Place them skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes.

    Make the Sauce

    Add the chopped plum tomatoes and cherry tomatoes to the skillet with the salmon. Pour in the white wine and let simmer for 5-7 minutes until the sauce thickens.

    Mash the Potatoes

    While the sauce is simmering, mash the boiled potatoes with butter, milk, salt, and pepper until smooth and creamy.

    Combine and Serve

    Serve the salmon with the tomato sauce over a bed of sautéed spinach and a generous scoop of mashed potatoes on the side.
