Method

Preparing the Red Snapper

    Season the Red Snapper

    Pat the red snapper fillets dry with paper towels. Season both sides with salt and black pepper.

    Cook the Red Snapper

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned red snapper fillets and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

Making the Lemon Butter Sauce

    Melt the Butter

    In the same skillet used for the fish, reduce heat to medium and add the butter. Let it melt and foam up.

    Add Garlic and Lemon Juice

    Add minced garlic and sauté for about 30 seconds until fragrant. Then, stir in lemon juice and chopped parsley. Let simmer for 2-3 minutes.

Preparing the Roasted Pepper Puree

    Blend the Ingredients

    In a blender, combine roasted red bell peppers, olive oil, balsamic vinegar, and salt. Blend until smooth.

Cooking the Asparagus

    Prepare the Asparagus

    Trim the ends of the asparagus and wash them thoroughly.

    Sauté the Asparagus

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add asparagus and sauté for 5-7 minutes until tender-crisp.

Plating the Dish

    Assemble the Plate

    On each plate, place a portion of mashed potatoes, followed by the sautéed asparagus. Top with the cooked red snapper fillet and drizzle with lemon butter sauce. Add a spoonful of roasted pepper puree on the side.
