Boil the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta cooking water, then drain the spaghetti.

Cook the Pancetta
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until it is crispy and golden brown, about 4-5 minutes. Remove from heat and set aside.

Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. The mixture should be creamy and smooth.

Mix in the Sauce
Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.

Season and Serve
Taste the pasta and season with additional salt and black pepper if needed. Serve immediately, garnished with extra Parmesan cheese and freshly ground black pepper.
