Chicken Preparation
- 1
Prepare the Chicken
Begin by seasoning the chicken breasts with salt and black pepper on both sides.
- 2
Coat the Chicken
Dredge each chicken breast in all-purpose flour, shaking off the excess. Then, dip them into beaten eggs, and finally coat them with breadcrumbs, ensuring they are fully covered.
Cooking
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove from skillet and place on paper towels to drain excess oil.
- 4
Assemble the Dish
Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce on the bottom. Place the fried chicken on top of the sauce. Spoon more marinara sauce over each chicken breast, then sprinkle mozzarella cheese and grated Parmesan cheese on top.
- 5
Bake
Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- 6
Garnish and Serve
Once baked, remove from the oven. Garnish with fresh basil leaves if desired, and serve hot.
