Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

  3. 3

    Cream Butter and Sugar

In another bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. 4

    Add Eggs and Wet Ingredients

Add the eggs one at a time, beating well after each addition. Then, add the milk, Limoncello, lemon zest, and vanilla extract, mixing until well combined.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

  6. 6

    Bake the Cake

Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Lemon Syrup Preparation

  1. 8

    Combine Ingredients

In a small saucepan, combine the granulated sugar, water, and lemon juice. Heat over medium heat, stirring until the sugar is dissolved.

  2. 9

    Add Limoncello

Remove from heat and stir in the Limoncello. Set aside to cool.

Lemon Glaze Preparation

  1. 10

    Mix Glaze Ingredients

In a medium bowl, whisk together the powdered sugar, lemon juice, and Limoncello until smooth and well combined.

Assembly

  1. 11

    Assemble the Cake

Once the cakes are completely cool, place one layer on a serving plate. Poke holes in the top using a skewer or toothpick and brush with half of the lemon syrup.

  2. 12

    Add Second Layer

Place the second layer on top and repeat the process with the remaining lemon syrup.

  3. 13

    Glaze the Cake

Pour the lemon glaze over the top of the cake, allowing it to drip down the sides.

  4. 14

    Serve and Enjoy

Let the glaze set for about 30 minutes before slicing. Serve and enjoy your delicious Limoncello Cake!
