Method

Prepare Pork Rib Eye

    Season the Pork

    Rub the pork rib eye pieces with olive oil, salt, and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

    Grill the Pork

    Preheat the grill to medium-high heat. Place the seasoned pork rib eye on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Remove from grill and let it rest.

Prepare Garlic Rosemary Sauce

    Melt Butter

    In a small saucepan over medium heat, melt 4 tablespoons of butter.

    Add Garlic and Rosemary

    Add minced garlic and fresh rosemary to the melted butter. Sauté for about 2-3 minutes until fragrant.

    Add Lemon Juice

    Stir in lemon juice and remove from heat. Set aside.

Prepare Beef Demi Glaze

    Heat Demi Glaze

    In a small saucepan, heat 1 cup of beef demi glaze over low heat until warmed through.

Prepare Seasonal Vegetables

    Chop Vegetables

    Slice the carrots, zucchini, and bell pepper into bite-sized pieces.

    Sauté Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped vegetables, season with salt and black pepper to taste, and sauté for about 5-7 minutes until tender.

Prepare Mashed Potatoes

    Boil Potatoes

    Peel and chop the potatoes into quarters. Boil in a large pot of salted water until fork-tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, and salt to taste. Mash until smooth and creamy.

Plate and Serve

    Assemble the Dish

    On a plate, place a generous scoop of mashed potatoes, top with grilled pork rib eye, drizzle with garlic rosemary sauce, and serve alongside sautéed seasonal vegetables and warmed beef demi glaze.
