Activate the Yeast
In a small bowl, combine warm water (110°F-115°F), sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until the dough starts to form.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is sticky, add a little more flour as needed.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.

Shape the Knots
Preheat your oven to 375°F (190°C). Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a rope about 8 inches long, then tie it into a knot.
