Making the Fettuccine

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add the olive oil. Use a fork to whisk the eggs, gradually incorporating the flour until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface. Knead it for about 8-10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into four equal pieces. Roll each piece out into thin sheets using a pasta machine or a rolling pin. Dust with flour to prevent sticking.

    Cut into Fettuccine

    Once rolled out, fold the sheet gently and cut it into strips about 1/4 inch wide. Unfold the strips and lay them out on a floured surface.

Preparing the Sauce

    In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add minced garlic (from the garlic cloves) and sauté for about 1 minute until fragrant.

    Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese, mixing until completely melted and combined. Season with salt, pepper, and crushed red pepper flakes to taste.

    Tear the fresh basil leaves and stir them into the sauce just before serving for a burst of flavor.

Cooking the Fettuccine

    In a large pot of salted boiling water, add the freshly made fettuccine. Cook for 2-4 minutes until al dente, then drain.
