Method

Preparation of Seafood

  1. 1

    Prepare the seafood

In a large bowl, combine the calamari, shrimp, scallops, cod, and mussels. Set aside.

Making the Broth

  1. 2

    Sauté garlic

In a large pot, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

  2. 3

    Add spices and liquids

Stir in the red pepper flakes, seafood stock, crushed tomatoes, and white wine. Bring the mixture to a simmer.

  3. 4

    Season the broth

Add salt and black pepper to taste. Let the broth simmer for about 10 minutes to meld the flavors.

Cooking the Seafood

  1. 5

    Add seafood to broth

Gently add the prepared seafood mixture to the simmering broth. Cook for about 5-7 minutes, or until the shrimp are pink and the mussels have opened.

  2. 6

    Finish with parsley

Stir in the chopped parsley just before serving for freshness.

Preparing the Crostini

  1. 7

    Prepare bread

Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2-inch slices.

  2. 8

    Brush and bake

Brush both sides of each slice with olive oil, then place them on a baking sheet. Bake for about 5-7 minutes, or until golden.

  3. 9

    Rub with garlic

Remove from the oven and immediately rub one side of each slice with the halved garlic clove for flavor.
