Chicken Preparation

Marinate the Chicken
In a bowl, mix olive oil, garlic powder, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.
Aioli Preparation

Make the Roasted Pepper Aioli
In a blender, combine roasted red peppers, mayonnaise, garlic, and lemon juice. Blend until smooth. Adjust seasoning with salt if needed.
Assembling the Panini

Prepare the Ingredients
Slice the grilled chicken breasts into thin strips. Slice the fresh tomato.

Assemble the Panini
Take one piece of panini bread, spread a generous amount of roasted pepper aioli, layer with baby spinach, sliced tomatoes, grilled chicken, and top with mozzarella cheese. Place the other piece of bread on top.

Grill the Panini
Preheat a panini press or grill pan over medium heat. Grill the assembled sandwich for about 4-5 minutes, or until the bread is golden brown and the cheese is melted.

Remove the panini from the grill, let it cool slightly, then slice in half and serve warm.
