Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-7 minutes until it becomes frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

In a bowl, mix together the ricotta cheese, mozzarella cheese, salt, pepper, and Italian seasoning until well combined.

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape the Calzone
Once the dough has risen, punch it down and roll it out into a circle about 10 inches in diameter. Place the filling on one half of the circle.

Seal the Calzone
Fold the other half of the dough over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.

Bake the Calzone
Place the calzone on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
