Prepare the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.

Mix the Dough
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise for about 1 hour, or until doubled in size.

Shape the Bread
Punch down the dough, shape it into a loaf, and place it in a greased loaf pan.

Cover and let the dough rise again for about 30-40 minutes.

Preheat the oven to 375°F (190°C). Bake for 25-30 minutes until golden brown.

Add mixed vegetables and canned diced tomatoes. Stir well.

Add vegetable broth and bring to a boil.

Chop the romaine lettuce, slice the cucumber, and halve the cherry tomatoes. Combine in a large bowl.

In a separate bowl, combine romaine lettuce, cherry tomatoes, and croutons.
