Omelet Preparation

    Prepare the vegetables

    Chop the broccoli, red and green peppers, tomato, and onion into small pieces.

    Whisk the eggs

    In a bowl, whisk the eggs with salt and black pepper until well combined.

    Cook the vegetables

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the chopped vegetables and sauté for about 3-4 minutes until they are tender.

    Add eggs

    Pour the whisked eggs over the sautéed vegetables. Cook until the edges start to set, then gently lift the edges with a spatula, allowing uncooked eggs to flow underneath.

    Finish cooking

    Once the eggs are mostly set, fold the omelet in half and cook for an additional minute until fully cooked.

    Prepare the potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, garlic powder, paprika, salt, and black pepper.

    Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Texas Toast Preparation

    Prepare the Texas Toast

    Spread butter on one side of each slice of bread and sprinkle garlic powder on top.

    Toast

    In a skillet or on a griddle, place the slices butter-side down and toast until golden brown, about 2-3 minutes.
