Preparation and Cooking
Prepare the Shrimp
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, paprika, and garlic powder. In another bowl, combine the eggs and buttermilk. Dip each jumbo shrimp first into the egg mixture, then into the flour mixture, ensuring they are well coated.
Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches, frying for about 2-3 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Cook the Waffle Fries
While frying the shrimp, cook the waffle fries according to package instructions until they are crispy.
Prepare the Cole Slaw
In a bowl, toss the cole slaw mix with your favorite dressing (like mayonnaise and vinegar) to taste.
Serve
