Crab Cake Preparation

Prepare the Mixture
In a large mixing bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, and breadcrumbs. Mix gently to combine, being careful not to break up the crab meat too much.

Add Green Onions
Finely chop the green onions and add them to the mixture. Season with salt and black pepper to taste. Mix gently again.

Form the Mini Cakes
Using your hands, form small patties (about 2 inches in diameter) from the mixture. Place them on a parchment-lined baking tray.

Chill the Cakes
Cover the tray with plastic wrap and refrigerate the crab cakes for at least 30 minutes to help them firm up.

Cook the Crab Cakes
In a large skillet, heat the olive oil over medium heat. Once hot, add the crab cakes in batches and cook for about 3-4 minutes on each side, or until golden brown.

Serve the crab cake minis warm with chipotle ranch for dipping.
