Mussels and Sauce
Method
Cooking Instructions
- 1
Prepare the Mussels
In a large bowl, soak the mussels in cold water for about 20 minutes. Scrub the shells to remove any debris and remove any beards. Rinse thoroughly and set aside.
- 2
Cook the Sauce
In a large pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).
- 3
Add Tomatoes and Wine
Stir in the crushed tomatoes and white wine. Bring the mixture to a simmer, then season with salt and pepper to taste.
- 4
Steam the Mussels
Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.
- 5
Garnish and Serve
Remove the pot from heat, stir in the chopped parsley, and serve the mussels hot with garlic bread on the side.
