    Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and the eyes if necessary.

    In a shallow dish, combine flour, cornmeal, salt, black pepper, paprika, and garlic powder. Mix well.

    Prepare the Egg Mixture

    In another bowl, whisk together the egg and milk until well combined.

    Coat the Crabs

    Dip each crab into the egg mixture, allowing any excess to drip off. Then, dredge them in the flour mixture, ensuring they are evenly coated.

    Griddle the Crabs

    In a large skillet or griddle, heat the butter over medium-high heat. Once melted and bubbling, add the crabs and cook for about 3-4 minutes on each side, or until golden brown and crispy.

    Remove the crabs from the skillet, drain on paper towels, and serve immediately with lemon wedges and a sprinkle of fresh parsley.
