Method
Preparing the Soft Shell Crab

Prep the Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and any other unwanted parts.

Dredge in Flour
In a shallow dish, mix the flour, salt, and black pepper. Dredge each crab in the flour mixture, shaking off any excess.

Griddle the Crabs
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the crabs and cook for about 3-4 minutes on each side until golden brown and crispy.
Making Citrus Herb Butter

Prepare the Butter
In a small saucepan over low heat, melt the unsalted butter. Stir in the lemon juice, parsley, chives, garlic, orange zest, salt, and pepper. Cook for 2-3 minutes until fragrant.
Making Tartar Sauce

Combine Ingredients
In a small bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, fresh dill, salt, and pepper. Adjust seasoning to taste.
Serving

Serve the griddled soft shell crabs topped with citrus herb butter alongside the tartar sauce for dipping.
