    Prepare the Grits

    In a medium pot, bring 4 cups of water to a boil. Stir in the Red Mule organic grits and a pinch of salt. Reduce the heat to low and simmer for about 20-25 minutes, stirring occasionally until thickened. Remove from heat and stir in the gouda cheese until melted and well combined.

    Cook the Bacon

    In a skillet over medium heat, add the diced bacon and cook until crispy. Remove the bacon from the skillet and let it drain on paper towels. Leave the bacon drippings in the skillet.

    Blacken the Shrimp

    In the same skillet with bacon drippings, add olive oil and heat over medium-high heat. Toss the shrimp with blackening seasoning and add them to the skillet. Cook for 2-3 minutes on each side until the shrimp are cooked through and opaque.

    Combine and Serve

    To serve, spoon the creamy gouda grits onto a plate, top with blackened shrimp, and sprinkle with crab meat, crispy bacon, and chopped green onions. Season with salt and black pepper to taste.
