    Prepare the Filling

    In a large bowl, combine the finely chopped shiitake mushrooms, bok choy, grated carrots, minced ginger, and minced garlic. Add sesame oil and soy sauce. Mix well until all ingredients are evenly coated.

    Assemble the Pot Stickers

    Place a tablespoon of the filling in the center of each wheat flour wrapper. Moisten the edges of the wrapper with a little water, fold it over to create a half-moon shape, and press the edges to seal. Repeat until all filling is used.

    Cook the Pot Stickers

    Heat vegetable oil in a large skillet over medium-high heat. Arrange the pot stickers in the skillet, making sure not to overcrowd. Fry for 3-4 minutes or until the bottoms are golden brown.

    Steam the Pot Stickers

    Add water to the skillet and cover immediately. Let steam for about 5-6 minutes, or until the water has evaporated and the pot stickers are cooked through.

    Serve

    Remove pot stickers from the skillet and serve hot with additional soy sauce or dipping sauce of your choice.
