Crab Cake Preparation

Prepare the Crab Cake Mixture
In a large bowl, gently combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, and breadcrumbs. Season with salt and black pepper to taste. Be careful not to break up the crab meat too much.

Form the Crab Cakes
Divide the mixture into equal portions and shape them into patties, about 3-4 inches in diameter. Place them on a baking sheet lined with parchment paper.

Chill the Crab Cakes
Cover the crab cakes with plastic wrap and refrigerate for at least 30 minutes to help them hold their shape during cooking.

Cook the Crab Cakes
Heat the olive oil in a large skillet over medium heat. Add the crab cakes to the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.

Assemble the Sandwich
Toast your choice of bread. Spread tartar sauce on the bottom slice, add lettuce, a cooked crab cake, tomato slices, onion slices, and pickles. Top with the other slice of bread and serve.
