Prepare the crust
In a medium bowl, combine graham cracker crumbs, 0.25 cup of sugar, and melted unsalted butter. Mix until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 8-10 minutes or until lightly golden. Remove from oven and let cool.

Make the filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add in 1 cup of granulated sugar and continue beating until well combined. Add in sour cream, heavy cream, vanilla extract, and lemon juice. Mix until smooth. Add eggs one at a time, mixing on low speed after each addition until just blended.

Bake the cheesecake
Pour the cream cheese mixture over the cooled crust in the springform pan. Bake at 325°F (160°C) for 1 hour, or until the center is set and only slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill and serve
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan, slice, and serve.
