    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, carrots, and green bell pepper. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Stir in the minced garlic and cook for an additional minute. Then add the diced tomatoes, including their juices, and stir well.

    Combine Broth and Seasonings

    Pour in the vegetable broth, and add the Old Bay seasoning, bay leaves, salt, and black pepper. Stir to combine.

    Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, allowing the flavors to meld.
