Preparation

Prepare the Mahi
In a bowl, mix olive oil, salt, black pepper, garlic powder, and paprika. Coat the Mahi Mahi fillets with the seasoning mixture.

Grill the Mahi
Preheat the grill or skillet over medium heat. Grill the seasoned Mahi Mahi fillets for about 4-5 minutes on each side until cooked through and flaky.

Prepare the sandwich
While the fish is cooking, slice the ciabatta bread in half. Once the Mahi is done, place it on the bottom half of the ciabatta. Add lettuce leaves and sliced tomato on top.

Finish the sandwich
Top the sandwich with the other half of the ciabatta and press down lightly.

Cook the waffle fries
Prepare the waffle fries according to the package instructions. Season with your choice of seasoning.

Serve
Cut the sandwich in half if desired and serve with seasoned waffle fries on the side.
