    Prepare the Red Wine Butter

    In a small saucepan, combine red wine and 2 tablespoons of butter. Bring to a simmer over medium heat, reducing the wine until it thickens slightly. Remove from heat and stir in remaining butter until melted. Set aside.

    Cook the Steak

    Preheat the grill to medium-high heat. Season the sirloin steak with salt and pepper. Brush the grill grates with olive oil. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from grill and let rest for 5 minutes.

    Prepare the Mashed Potatoes

    While the steak is resting, peel and chop potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add milk and 2 tablespoons of butter, then mash until creamy and smooth. Season with salt and pepper to taste.

    Cook Seasonal Vegetables

    In a skillet, heat olive oil over medium heat. Add seasonal vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

    Serve

    Slice the steak and plate with mashed potatoes and sautéed vegetables. Drizzle red wine butter over the steak and sprinkle with gorgonzola crumbles before serving.
