Season the fish fillets with olive oil, paprika, cumin, chili powder, salt, and pepper. Choose your cooking method: grill, pan-fry, or bake the fish until cooked through and crispy (about 3-4 minutes per side if grilling or frying, 15-20 minutes at 400°F if baking).

Cook seasoned waffle fries according to package instructions until crispy.

Warm the corn tortillas in a dry skillet over medium heat until pliable. Place a portion of the cooked fish on each tortilla, top with shredded cabbage, diced tomatoes, and drizzle with baja sauce.
