    Prepare the Batter

    In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in cold water until the batter is smooth and well combined.

    Heat the Oil

    In a large pot or deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Cod

    Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered cod into the hot oil. Fry in batches until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat until they are pliable, about 30 seconds on each side.

    Assemble the Tacos

    On each tortilla, place a few pieces of fried cod, top with shredded cabbage, diced tomatoes, and drizzle with Baja sauce. Serve immediately.
