    Prepare the Fish

    In a large bowl, mix flour, cornstarch, baking powder, salt, pepper, and paprika. Gradually whisk in cold sparkling water until a smooth batter forms. Dip each cod fillet into the batter, allowing excess to drip off.

    Fry the Fish

    In a deep skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the battered cod fillets in batches. Fry until golden brown and crispy, about 4-5 minutes per side. Use a slotted spoon to transfer cooked fish to a paper towel-lined plate to drain excess oil.

    Prepare the Sandwich

    Slice the brioche buns in half. On the bottom half, spread a generous amount of tartar sauce. Place a fried cod fillet on top, followed by a lettuce leaf and a slice of tomato. Top with the other half of the bun.

    Serve the crispy fish sandwiches warm with extra tartar sauce on the side.
