Prepare the Shrimp
Butterfly the shrimp by slicing them along the back, being careful not to cut all the way through. Rinse and pat them dry with paper towels.

Bread the Shrimp
Dredge each butterflied shrimp in flour, shaking off the excess. Dip into the beaten eggs and then coat with the breadcrumb mixture, pressing gently to adhere.

Heat the Oil
In a large, deep pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, being sure not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown and crispy.

Drain and Serve
Remove the shrimp from the oil and drain on paper towels. Serve hot with tartar sauce, cole slaw, and waffle fries.
