    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes thinly, about 1/8 inch thick. Rinse the slices in cold water to remove excess starch.

    Soak the potato slices in a bowl of cold water for at least 30 minutes to 1 hour. This helps to achieve a crispier texture.

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
