Prepare the Shrimp
In a mixing bowl, combine flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk together the egg and milk. Dip each shrimp into the egg mixture, then dredge in the flour mixture, ensuring they are evenly coated.

Fry the Shrimp
In a large skillet or deep fryer, heat vegetable oil over medium-high heat. Once hot, carefully add the coated shrimp in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Toss in Buffalo Sauce
In a large bowl, toss the fried shrimp in buffalo sauce until they are well coated.

Serve the buffalo shrimp hot with blue cheese dressing for dipping and crisp celery sticks on the side.
