For the Za'atar Crusted Salmon

    Prepare the Salmon

    Preheat your grill to medium-high heat.

    Season the Salmon

    In a small bowl, mix the za'atar spice blend, olive oil, salt, and black pepper to form a paste. Rub this mixture evenly over the salmon fillets.

    Grill the Salmon

    Place the salmon fillets on the grill skin side down. Grill for about 4-6 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

For the Couscous

    Boil the Water

    In a medium saucepan, bring the water to a boil. Add the salt and olive oil.

    Cook the Couscous

    Once the water is boiling, stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes or until the water is absorbed.

    Fluff the Couscous

    After 5 minutes, fluff the couscous with a fork to separate the grains.

For the Pisto

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.

    Add the Remaining Ingredients

    Add the zucchini, bell pepper, and tomato. Season with salt. Cook for about 10-12 minutes, stirring occasionally until the vegetables are tender.

For the Sumac Labneh

    Mix the Labneh

    In a small bowl, combine the labneh, sumac, olive oil, and salt. Mix well until smooth.
