Mix Ingredients
In a mixing bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and fresh dill. Stir well until all ingredients are thoroughly mixed. Cover and refrigerate until ready to serve.

Fry Potatoes
Heat 4 cups of vegetable oil in a deep fryer or a large pot over medium-high heat. Once the oil is hot (around 350°F or 175°C), drain the soaked potatoes and pat them dry with paper towels. Carefully add the potatoes in batches to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually pour in the beer, whisking until the batter is smooth and has no lumps.

Batter and Fry the Cod
Dip each cod fillet into the batter, ensuring it is fully coated. In the same pot or fryer used for the fries, heat the vegetable oil to 350°F (175°C) if not already heated. Carefully add the battered cod fillets to the hot oil and fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Plate the Dish
On a serving plate, arrange the crispy fries alongside the beer-battered cod fillets. Serve with the chilled tartar sauce on the side.
